Brazilian Cheese Bread

Ingredients

2 cups tapioca flour (also called tapioca starch)
1 1/2 cups shredded Parmesan cheese (or a mix of Parmesan and cheddar for a stretchier texture)
1 cup whole milk
1/4 cup unsalted butter
1 teaspoon salt
1/2 teaspoon garlic powder (optional, for extra flavor)
2 large eggs
Instructions
1. Preheat and Prepare:
Preheat your oven to 375°F (190°C). Grease a mini muffin tin or a standard muffin tin with non-stick spray or butter. You can also use silicone molds if you have them.
2. Prepare the Wet Ingredients:
In a blender, blend all ingredients until a smooth pancake batter-like texture forms.
3. Fill the Muffin Tin:
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 of the way full.
4. Bake:
Bake for 15-20 minutes, or until the cheese bread is puffed up, golden brown on top, and a toothpick inserted comes out clean.
5. Serve:
Let the cheese bread cool slightly before serving. They’re best enjoyed fresh out of the oven, but they’ll still be delicious at room temperature!
