Breakfast Tacos

Ingredients 

Serving Size: 4 tacos

  • 4 small flour tortillas (or corn, if you prefer)

  • 4 large eggs

  • 4 strips of bacon

  • 1/2 cup shredded cheddar cheese

  • 1 avocado, sliced

  • 2 tbsp fresh chives, chopped

  • 2 tbsp grated parmesan cheese

  • 1-2 tbsp chili crunch (optional, for topping)

  • Salt and pepper, to taste

  • Olive oil or butter for cooking

Instructions 

  1. Cook the bacon:

  • In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes.

  • Once done, remove the bacon from the skillet and place it on a paper towel to drain excess fat. Crumble it into small pieces.

  1. Make the sunny-side-up eggs:

  • In the same skillet, add a bit of olive oil or butter and heat over medium-low.

  • Crack the eggs gently into the skillet, being careful not to break the yolks.

  • Cook for 2-3 minutes until the whites are set but the yolks are still runny. Season with salt and pepper to taste.

  • If you'd like the yolk to set a bit more, cover the pan with a lid for 30 seconds to a minute.

  1. Warm the tortillas:

  • While the eggs are cooking, warm the tortillas in a dry skillet over low heat for 30 seconds on each side, or wrap them in a damp paper towel and microwave them for 20-30 seconds until soft and warm.

  1. Assemble the tacos:

  • Place a warm tortilla on each plate.

  • Layer on the shredded cheddar cheese, followed by a slice of avocado.

  • Gently place a sunny-side-up egg on top of each taco.

  • Sprinkle with crumbled bacon, fresh chives, and grated parmesan cheese.

  • Drizzle with chili crunch for an added spicy, savory kick.

  • Serve immediately while the eggs are still warm and enjoy your delicious breakfast tacos!
