Breakfast Tacos

Ingredients
Serving Size: 4 tacos
4 small flour tortillas (or corn, if you prefer)
4 large eggs
4 strips of bacon
1/2 cup shredded cheddar cheese
1 avocado, sliced
2 tbsp fresh chives, chopped
2 tbsp grated parmesan cheese
1-2 tbsp chili crunch (optional, for topping)
Salt and pepper, to taste
Olive oil or butter for cooking
Instructions
Cook the bacon:
In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes.
Once done, remove the bacon from the skillet and place it on a paper towel to drain excess fat. Crumble it into small pieces.
Make the sunny-side-up eggs:
In the same skillet, add a bit of olive oil or butter and heat over medium-low.
Crack the eggs gently into the skillet, being careful not to break the yolks.
Cook for 2-3 minutes until the whites are set but the yolks are still runny. Season with salt and pepper to taste.
If you'd like the yolk to set a bit more, cover the pan with a lid for 30 seconds to a minute.
Warm the tortillas:
While the eggs are cooking, warm the tortillas in a dry skillet over low heat for 30 seconds on each side, or wrap them in a damp paper towel and microwave them for 20-30 seconds until soft and warm.
Assemble the tacos:
Place a warm tortilla on each plate.
Layer on the shredded cheddar cheese, followed by a slice of avocado.
Gently place a sunny-side-up egg on top of each taco.
Sprinkle with crumbled bacon, fresh chives, and grated parmesan cheese.
Drizzle with chili crunch for an added spicy, savory kick.
Serve immediately while the eggs are still warm and enjoy your delicious breakfast tacos!
