1 lb rigatoni pasta (or any pasta you prefer)
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon chopped Calabrian chili peppers(adjust based on your spice preference)
1/2 cup canned tomato paste
1 can (14 oz) crushed tomatoes
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional, for extra heat)
Salt and pepper, to taste
1/2 cup heavy cream
1/2 cup grated Parmesan cheese (plus extra for serving)
Fresh basil or parsley, chopped (for garnish)
Instructions
Cook the Pasta:
Cook the rigatoni in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.
Make the Sauce:
In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Stir in the Calabrian chili paste and tomato paste, cooking for another 1-2 minutes. This will help deepen the flavors.
Add the crushed tomatoes, oregano, and red pepper flakes (if using). Stir everything together and let it simmer on low heat for 10-15 minutes, allowing the sauce to thicken and the flavors to meld. Season with salt and pepper to taste.
Finish the Sauce:
Once the sauce is done, stir in the heavy cream (if using) for a creamy, rich texture. Let it simmer for another 2-3 minutes to combine the cream and sauce.
Combine Pasta and Sauce:
Add the cooked rigatoni to the sauce, tossing to coat the pasta. If the sauce is too thick, add some of the reserved pasta water to loosen it up and help the sauce cling to the pasta.
Serve:
Stir in the grated Parmesan cheese for extra flavor, and garnish with fresh basil or parsley.
