For the Smash Tacos:
1 lb ground chicken
8 small taco-sized flour tortillas
Olive oil (for cooking)
Salt and pepper (to taste)
For the Caesar Salad Topping:
1 small head of romaine lettuce, chopped
1/2 cup Caesar dressing (store-bought or homemade)
1/4 cup shredded Parmesan cheese
Freshly cracked black pepper (to taste)
For the Croissant Croutons:
2 large croissants, cut into small cubes
1 tbsp olive oil
Pinch of salt
For Garnish:
Drizzle of olive oil
Extra Parmesan
Instructions
1. Make the Croissant Croutons:
Preheat your oven to 375°F (190°C).
In a bowl, toss the croissant cubes with olive oil and a pinch of salt.
Spread the croissant cubes on a baking sheet and bake for 8-10 minutes, or until golden and crispy. Set aside.
2. Prepare the Ground Chicken:
Heat a drizzle of olive oil in a large skillet over medium-high heat.
Spread a thin layer of the ground chicken onto each small flour tortilla until the ground chicken covers the entire side of the tortilla
Place tortillas ground chicken-side down and press.
Cook for 4-5 minutes or until browning on chicken side. Then flip and toast the other side of the tortilla for another minute or so.
3. Prepare the Caesar Salad Topping:
In a bowl, toss the chopped romaine lettuce with the Caesar dressing.
Add in the shredded Parmesan and freshly cracked black pepper to taste. Toss again to combine.
5. Assemble the Taco:
Place each smashed chicken taco onto a plate.
Spoon a generous amount of Caesar salad onto each taco.
Top with croissant croutons, a drizzle of olive oil, and a sprinkle of extra Parmesan cheese (optional).
Finish with freshly cracked black pepper to taste.
Serve the smash tacos immediately while the croutons are crunchy and the taco is warm.
