Ingredients

For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
For the Sandwich:
4 slices sourdough bread
2 tbsp pesto (store-bought or homemade)
4 slices cooked bacon
4 slices cheddar cheese
1 large tomato, sliced
A handful of lettuce (e.g., romaine or iceberg)
1 yellow onion, thinly sliced
1 tbsp butter (for caramelizing the onions)
Instructions
1. Cook the Chicken Breast:
Season the chicken breasts with olive oil, salt, pepper, garlic powder, and paprika.
Heat a pan over medium heat, add a little olive oil, and cook the chicken for about 5-7 minutes per side until fully cooked (internal temperature should reach 165°F or 74°C).
Once cooked, remove the chicken from the pan and set aside. Slice it into strips or pieces to fit your sandwich.
2. Caramelize the Onions:
In the same pan, add butter and the thinly sliced onion. Cook over medium-low heat, stirring occasionally.
Let the onions slowly cook and caramelize for about 15-20 minutes, until they’re golden brown and sweet. You can add a pinch of salt to help them cook down.
3. Prepare the Sourdough Bread:
Toast the sourdough bread slices in a pan with some olive oil. Add 2 slices of cheddar cheese to bottom piece of bread and add the top slice of bread on top. Toast for 3-4 minutes or until golden and flip. Repeat the same on the other side.
4. Assemble the Sandwich:
Open the two slices of bread so the gooey cheddar cheese spreads apart.
Spread pesto on one side of each slice of sourdough.
Layer on the cooked chicken breast, cheddar cheese, lettuce, tomato slices, caramelized onions, and crispy bacon.
Top with the second slice of bread, pesto side down.
Cut the sandwich in half and serve with a side of chips, fries, or a salad.
