1 lb pasta (like fettuccine, spaghetti, or penne)
4 tablespoons olive oil
4 cloves garlic, minced
2 cups heavy cream
1 cup chicken broth (or vegetable broth)
Zest and juice of 2 lemons
Salt and pepper, to taste
1 cup grated Parmesan cheese
1 tsp red pepper flakes
Fresh parsley, chopped (optional for garnish)
Instructions
Cook the Pasta:
Cook the pasta in salted boiling water according to the package instructions. Once done, reserve 1 cup of pasta water and drain the rest. Set aside.
Make the Cream Sauce:
In a large pan, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
Pour in the chicken broth and bring it to a simmer. Let it cook for about 2-3 minutes, allowing the flavors to combine.
Add the heavy cream, lemon zest, lemon juice, and red pepper flakes. Stir well and let it simmer for another 5 minutes to thicken slightly.
Combine the Pasta and Sauce:
Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add some of the reserved pasta water (a tablespoon at a time) until you reach your desired consistency.
Finish the Dish:
Stir in the grated Parmesan cheese and season with salt and pepper to taste.
Garnish with fresh parsley if desired.
