Creamy Lemon Pasta

Ingredients 

Serving Size: 8

  • 1 lb pasta (like fettuccine, spaghetti, or penne)

  • 4 tablespoons olive oil

  • 4 cloves garlic, minced

  • 2 cups heavy cream

  • 1 cup chicken broth (or vegetable broth)

  • Zest and juice of 2 lemons

  • Salt and pepper, to taste

  • 1 cup grated Parmesan cheese

  • 1 tsp red pepper flakes

  • Fresh parsley, chopped (optional for garnish)

Instructions 

  1. Cook the Pasta:

  • Cook the pasta in salted boiling water according to the package instructions. Once done, reserve 1 cup of pasta water and drain the rest. Set aside.

  1. Make the Cream Sauce:

  • In a large pan, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

  • Pour in the chicken broth and bring it to a simmer. Let it cook for about 2-3 minutes, allowing the flavors to combine.

  • Add the heavy cream, lemon zest, lemon juice, and red pepper flakes. Stir well and let it simmer for another 5 minutes to thicken slightly.

  1. Combine the Pasta and Sauce:

  • Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add some of the reserved pasta water (a tablespoon at a time) until you reach your desired consistency.

  1. Finish the Dish:

  • Stir in the grated Parmesan cheese and season with salt and pepper to taste.

  • Garnish with fresh parsley if desired.
