Ingredients

3 cups all-purpose flour
4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup graulated sugar
1/2 stick cold unsalted butter, grated
1 and 1/4 cup buttermilk
1 egg, whisked with 2 tbsp whole milk (for brushing)
Instructions
Preheat Oven & Prepare Baking Sheet:
Preheat your oven to 450°F (230°C).
Line a baking sheet with parchment paper.
2. Mix Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, baking soda, sugar and salt until well combined.
Add the cold, grated butter into the dry ingredients. Use your fingers or a pastry cutter to mix the butter into the flour until it resembles coarse crumbs. You should still see little chunks of butter throughout the mixture.
Slowly pour the wet ingredients (buttermilk and whole milk) into the dry mixture, stirring gently until just combined. Be careful not to overmix – the dough should be slightly lumpy.
3. Form the Dough:
Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle (about 1-inch thick).
Fold the dough over itself a couple of times (about 3 folds). This helps create flaky layers in your biscuits. Add more flour if necessary.
Use a biscuit cutter or a round glass (about 2-3 inches in diameter) to cut out biscuits. Press straight down, don’t twist the cutter, to ensure the biscuits rise properly.
Place the biscuits on the prepared baking sheet, leaving a little space between them.
4. Brush with Egg Wash:
In a small bowl, whisk together the egg and 2 tbsp of whole milk.
Brush the tops of each biscuit with the egg wash for a golden finish.
5. Bake:
Bake the biscuits in the preheated oven for 12-15 minutes, or until they’re golden brown on top.
Let the biscuits cool for a few minutes before serving. Enjoy them warm with butter, jam, or your favorite toppings!
