Garlic Parm Meatball Arayes

Ingredients 

Serving Size: 16 arayes

For the Italian Meatball Stuffing:

  • 1/2 lb ground beef

  • 1/2 lb ground lamb

  • 1/4 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1/4 cup diced yellow onion

  • 1 egg

  • 2 tbsp chopped fresh parsley

  • 1 tsp dried oregano

  • 1/2 tsp red pepper flakes (optional)

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp Worcestershire

  • 1/4 cup whole milk

For the Arayes:

  • 4 large pita breads, cut in halves

  • Olive oil (for frying)

  • Vodka sauce or marinara for dipping

For the Garlic Parmesan Butter:

  • 4 tbsp butter, melted

  • 2 cloves garlic, minced

  • 2 tbsp grated Parmesan

  • 1 tbsp chopped fresh parsley

  • 1/2 tsp dried oregano

  • 1/4 tsp salt

Instructions 

1. Prepare the Meatball Stuffing:

  • In a mixing bowl, combine all the stuffing ingredients. Mix well but avoid overworking the meat.

2. Stuff the Pita:

  • Cut each pita in half to create pockets.

  • Stuff each pita half with a generous amount of the meat mixture, spreading it evenly inside. Press gently to flatten slightly. Cut the pita again so you have fourths.

3. Cook the Arayes:

  • Preheat a grill pan or skillet over medium heat.

  • Add olive oil to the pan.

  • Add your arayes meat side down.

  • Cook for about 4-5 minutes per side, pressing gently with a spatula, until golden brown and crispy. Make sure the meat is fully cooked inside.

4. Make the Garlic Parmesan Butter:

  • In a small bowl, mix the melted butter, minced garlic, Parmesan, parsley, oregano, and salt.

5. Lather the Arayes:

  • Immediately after cooking, brush the hot arayes with the garlic Parmesan butter.

  • Serve hot with marinara sauce for dipping
