Healthy Chicken Kitchen Bowls with Mustard Curry

Ingredients 

Serving Size: 3 bowls

For the Chicken:

  • 2 boneless, skinless chicken breasts (or thighs)

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp ground cumin

  • 1/2 tsp dried oregano

  • 1/2 tsp chili powder

  • Salt and pepper, to taste

For the Rice:

  • 1 cup cooked quinoa (2 cups vegetable stock or water per 1 cup quinoa)

For the Toppings:

  • 1 cup shredded romaine lettuce

  • 1/2 cup diced tomatoes

  • 1/4 cup sliced red onion (optional)

  • 1/4 cup shredded cheese (optional)

  • 1/4 cup corn kernels (fresh or roasted, optional)

  • 1/4 cup black beans (optional)

  • 1/4 cup sliced avocado (optional)

For the Curry Sauce:

  • 1/4 cup Greek yogurt

  • 1 tbsp curry powder

  • 1 tbsp dijon mustard

  • 1 tbsp olive oil

  • 1 clove garlic

  • Salt and pepper to taste

Instructions 

  1. Cook the Chicken:

  • Preheat oven to 350 degrees

  • Cube your chicken breasts and place on a baking sheet lined with parchment paper. Coat in a little olive oil

  • In a small bowl, combine paprika, garlic powder, onion powder, cumin, oregano, chili powder, salt, and pepper.

  • Rub this spice mix onto the chicken breast

  • Cook chicken in oven for 10-12 minutes or until cooked through

  1. Make the Dressing/Sauce:

  • In a small blender, add all ingredients listed above and blend until smooth. Adjust seasoning to taste.

  1. Assemble the Bowl:

  • Start with a base of the seasoned quinoa in each bowl.

  • Layer on the greens, diced tomatoes, red onion, shredded cheese, corn, black beans, and avocado slices.

  • Top with cooked chicken.

  1. Drizzle with Dressing:

  • Spoon the sauce over the top of the chicken, and garnish with extra cilantro or lime wedges if desired.

  1. Serve:

  • Serve the chicken kitchen bowls immediately and enjoy the delicious combination of flavors and textures!
