Healthy Chicken Kitchen Bowls with Mustard Curry

Ingredients
Serving Size: 3 bowls
For the Chicken:
2 boneless, skinless chicken breasts (or thighs)
1 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp chili powder
Salt and pepper, to taste
For the Rice:
1 cup cooked quinoa (2 cups vegetable stock or water per 1 cup quinoa)
For the Toppings:
1 cup shredded romaine lettuce
1/2 cup diced tomatoes
1/4 cup sliced red onion (optional)
1/4 cup shredded cheese (optional)
1/4 cup corn kernels (fresh or roasted, optional)
1/4 cup black beans (optional)
1/4 cup sliced avocado (optional)
For the Curry Sauce:
1/4 cup Greek yogurt
1 tbsp curry powder
1 tbsp dijon mustard
1 tbsp olive oil
1 clove garlic
Salt and pepper to taste
Instructions
Cook the Chicken:
Preheat oven to 350 degrees
Cube your chicken breasts and place on a baking sheet lined with parchment paper. Coat in a little olive oil
In a small bowl, combine paprika, garlic powder, onion powder, cumin, oregano, chili powder, salt, and pepper.
Rub this spice mix onto the chicken breast
Cook chicken in oven for 10-12 minutes or until cooked through
Make the Dressing/Sauce:
In a small blender, add all ingredients listed above and blend until smooth. Adjust seasoning to taste.
Assemble the Bowl:
Start with a base of the seasoned quinoa in each bowl.
Layer on the greens, diced tomatoes, red onion, shredded cheese, corn, black beans, and avocado slices.
Top with cooked chicken.
Drizzle with Dressing:
Spoon the sauce over the top of the chicken, and garnish with extra cilantro or lime wedges if desired.
