Ingredients
Serving Size: 6 cups
For the Salmon:
4 skinless salmon filets, cut into small cubed pieces
2 tablespoons of kewpie mayo
1 tablespoon sriracha
1 tablespoon honey
2 tablespoons soy sauce
2 tsp sesame oil
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 clove garlic, minced
For the Cups:
12 nori sheets cut into squares
2 cups cooked sushi rice
1 tablespoon sesame seeds
Green onions, thinly sliced (optional, for garnish)
Avocado, cubed (optional, for garnish)
Instructions
1. Prepare the Salmon:
Preheat your oven to 400°F
In a small bowl, add your salmon and all ingredients listed above, mix until well coated.
2. Assemble the Cups:
Grease a cupcake tin and add your nori squares with a spoonful of sushi rice. Press down.
Add a scoop of your salmon mixture and top with sesame seeds. Bake in oven for 15 minutes.
3. Garnish and Serve:
Top each cup with a sprinkle of chili crunch and sliced green onions, or avocado for extra flavor and a burst of color.
Serve immediately and enjoy!
