Honey Soy Salmon Cups

Ingredients 

Serving Size: 6 cups

For the Salmon:

  • 4 skinless salmon filets, cut into small cubed pieces

  • 2 tablespoons of kewpie mayo

  • 1 tablespoon sriracha

  • 1 tablespoon honey

  • 2 tablespoons soy sauce

  • 2 tsp sesame oil

  • 1 tablespoon rice vinegar

  • 1 teaspoon grated fresh ginger

  • 1 clove garlic, minced

For the Cups:

  • 12 nori sheets cut into squares

  • 2 cups cooked sushi rice

  • 1 tablespoon sesame seeds

  • Green onions, thinly sliced (optional, for garnish)

  • Avocado, cubed (optional, for garnish)

Instructions 

1. Prepare the Salmon:

  • Preheat your oven to 400°F

  • In a small bowl, add your salmon and all ingredients listed above, mix until well coated.

2. Assemble the Cups:

  • Grease a cupcake tin and add your nori squares with a spoonful of sushi rice. Press down.

  • Add a scoop of your salmon mixture and top with sesame seeds. Bake in oven for 15 minutes.

3. Garnish and Serve:

  • Top each cup with a sprinkle of chili crunch and sliced green onions, or avocado for extra flavor and a burst of color.

  • Serve immediately and enjoy!
