Salmon Thai Red Curry

Ingredients 

Serving Size: 2-3 people

  • 2 salmon fillets (skinless, boneless, cut into chunks)

  • 2 tbsp red curry paste

  • 1 can (400 ml) coconut milk

  • 1 tbsp fish sauce

  • 1 tbsp brown sugar

  • 1 lime (zested and juiced)

  • 1 red bell pepper (sliced thinly)

  • 1 cup baby spinach (or other leafy greens)

  • 1/2 cup mushrooms (sliced, optional)

  • 1/4 cup fresh cilantro (chopped)

  • 1 tbsp olive oil (or any neutral oil)

  • 1 red chili pepper (optional, chopped, for spice)

  • 1 onion (sliced thinly)

  • 1 clove garlic (minced)

  • 1-inch piece of ginger (minced or grated)

  • 1/2 cup chicken or vegetable broth (optional, for more liquid)

  • Jasmine Rice for serving

Instructions 

  1. Prepare the ingredients:

  • Slice the salmon into bite-sized chunks.

  • Slice the onion, bell pepper, and mushrooms (if using).

  • Mince the garlic and ginger. Set aside.

  1. Cook the aromatics:

  • Heat the olive oil in a large pan or wok over medium heat.

  • Add the onion, garlic, ginger, and chopped chilies (if using). Sauté for about 2-3 minutes until fragrant and the onion softens.

  1. Make your curry:

  • Stir in the red curry paste and cook for 1-2 minutes, letting the flavors meld.

  • Pour in the coconut milk, followed by the broth (if using). Stir to combine.

  • Add the fish sauce, brown sugar, and lime juice. Adjust the seasoning if needed.

  • Bring the mixture to a simmer, then add the sliced bell pepper, mushrooms, and spinach. Cook for another 5-7 minutes, allowing the vegetables to soften.

  1. Add the salmon:

  • Gently add the salmon pieces to the curry and cook for about 5-7 minutes, or until the salmon is cooked through.

  1. Finish and serve:

  • Stir in the lime zest and fresh cilantro just before serving. Adjust seasoning with more lime juice or fish sauce, if necessary.

  • Serve the curry hot over jasmine rice or steamed rice.
