1 tbsp fish sauce

1/2 cup mushrooms (sliced, optional)
1/4 cup fresh cilantro (chopped)

1 onion (sliced thinly)
1 clove garlic (minced)
1-inch piece of ginger (minced or grated)
1/2 cup chicken or vegetable broth (optional, for more liquid)

Instructions
Prepare the ingredients:
Slice the salmon into bite-sized chunks.
Slice the onion, bell pepper, and mushrooms (if using).
Mince the garlic and ginger. Set aside.
Cook the aromatics:
Heat the olive oil in a large pan or wok over medium heat.
Add the onion, garlic, ginger, and chopped chilies (if using). Sauté for about 2-3 minutes until fragrant and the onion softens.
Make your curry:
