Bacon Wrapped Cheese Fries

The Ingredients
• 5 slices of Applewood smoked bacon (thick cut might be a little difficult to work with)
• 2 Russet (Baking) Potatoes
• Olive oil
• Salt and pepper to taste
• 1 Package shredded cheese
The Steps
1. Cutting the potatoes
Preheat the oven to 450°F. Wash the potatoes and cut lengthwise into “steak” fries. Make sure they are thick enough to be wrapped by bacon.
2. Removing the starch
Put the fries into a bowl of salted water for about 12 minutes so the starch on the surface can be removed.
3. Cut the bacon
While the fries are soaking, lay out your 5 slices of bacon and cut them in half length wise. After that, cut them all in half horizontally.
4. Baking the potatoes
Make sure you cover all sides of each french fry in olive oil and place them on the baking sheet. Once all french fries are on the baking sheet, add salt and pepper to taste. Then put them in the oven to bake for 20 minutes (or until golden brown).
5. Wrapping up
Take them out and let them cool for 5 minutes. Once cooled down a bit, wrap each french fry with bacon. Once they are all wrapped, add shredded cheese on top. Place back in oven for about 7-10 minutes.
