Healthy Dessert Balls
A lot of you have been asking for more healthy recipes, specifically desserts! I wanted to start with easy dessert balls because truthfully, there are many variations/substitutions when it comes to these recipes!
I have made them vegan, gluten free, dairy free, and for the most part, sugar free. But you can switch up the recipe to your liking! The recipes are sugar free (for the most part) because I use Lakanto Monk fruit Sweetener. Monk Fruit has many health benefits and is all-natural. It has zero calories and zero carbs so it won’t spike your blood sugar!

Cranberry Lemon Truffles
INGREDIENTS
gluten free, vegan, sugar free (except for the cranberries :)), non-GMO
- 1 1/2 cups almond flour
- 1/3 cup coconut flour
- 1/4 cup lemon juice (use real lemons for best flavor)
- 1/4 cup coconut oil
- 1/4 cup Lakanto sugar free maple syrup
- 3 tbsp Lakanto sugar free powdered sugar
- 1/2 tbsp lemon extract
- 1/2 tsp pure vanilla extract
- 1/4 cup dried cranberries, chopped
STEPS
- Add all ingredients to a food processor and mix until you get a cookie dough consistency.
- Add the dough to a large glass bowl and roll into 16 balls with your hands.
- Place the balls on a cookie sheet covered with parchment paper and set in the fridge for 20 minutes to harden.


Peanut Butter Cookie Dough Truffles
Gluten free, vegan, non-GMO, (almost) sugar free
INGREDIENTS
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/3 cup Lakanto sugar free maple syrup
- 1/4 cup PB2 powdered peanut butter
- 1 tbsp coconut oil, melted
- 1 tsp pure vanilla extract
- Pinch of salt
- 1/2 cup mini chocolate chips (I used Enjoy Life)
STEPS
- Add all ingredients (except for the chocolate chips) to a food processor and mix until you get a cookie dough consistency.
- Add the dough to a large glass bowl and fold in your chocolate chips. Roll into 110-12 balls with your hands.
- Place the balls on a cookie sheet covered with parchment paper and set in the fridge for 20 minutes to harden.
