Vegan Chocolate Ice Cream Made with Acacia Gum

This year I asked all of you what you’d like to see more of, and to my surprise, a lot of you said vegan and vegetarian recipes! I do realize many people have specific intolerances and allergies- in fact, many of my friends are gluten and dairy free while my cousin has recently been diagnosed with celiac disease- so I have taken the opportunity to create a healthy and all natural vegan ice cream that is also VERY DELICIOUS. The secret ingredient? Acacia Gum. Yes, I can probably guess you have never heard of it before. It is something I just recently came across myself! Before I get into the recipe, I figured I would tell you all a little bit about Acacia gum and why all of you try order it ASAP!


Acacia gum, also known as Arabic Gum or E414, comes from Acacia trees after the incision of their stems and branches. What’s so cool about it? It was used in Ancient Egypt which means it has been a part of our lifestyle for centuries!


The product is 100% plant based, GMO free, pesticide free, gluten free, odorless, colorless, and even low in calories! Never has there been a side effect reported because of the consumption of Acacia gum. It is also recognized as a fiber and a source of prebiotics.


Even though you may have not heard of it before, chances are you’ve tried it. Acacia gum is found in numerous products from breads to pet food! So if you think you’ve never had it, maybe your dog has! It is a great emulsifier; meaning it can efficiently stabilize oil in water which is common in making sodas. Because Acacia is low in calories, it makes it the perfect ingredient for dietary and natural beverages. It is even used to make wine healthier!   • 1 tsp acacia gum powder
  • 2 cups coconut milk
  • 2 cups liquid non-dairy creamer (or cashew cream)
  • ½ cup cocoa powder
  • ¼ tsp salt
  • 2/3 cup maple syrup
  • mini chocolate chips to taste


  1. heat acacia powder, milk, and creamer in a pot until uniform
  2. mix all ingredients in a bowl (expect for the chocolate chips)
  3. pour your whisked mixture into ice cube trays and freeze.
  4. The next day, thaw just enough so your processor can blend the mixture
  5. Fold in chocolate chips and freeze until you want to eat it!
